How did famous classical composers like "Mozart", "Bach" etc. compose?
They play amazingly and fast and apreggiated sequences but how did they come up with like eight minnutes of playing fast into songs? I find it very fascinating. Is it all just music theory? And being just musically brilliant like them?

The speed is not at all what is impressive. Are you impressed with people who can type quickly? That is simply a matter of practice - although of course there is more skill involved in playing an instrument quickly it is a similar process; muscle memory. Your brain remembers the movements required, which is why you can type words like "the" "and" and "where" really fast, but words like "schizophrenic" require more thought.
What IS impressive are the intricacies of the music. For instance in Bach how he fits his counterpoint together (different lines weaving in and out) or in Mozart how he changes his original idea into something completely different, yet still recognizable. For a contrast between Mozart at his best and at his (deliberately) worst, take a listen to his musical joke. The ending of the (linked) fourth movement is hilarious. The orchestra are playing it correctly!

Mozart is sending up rubbish Classical composers by composing a piece with bad chord progressions, irregular phrase lengths (done badly), a REALLY awful 'fugue' (at 35' or so) and obvious accompaniment to a weak melody. Everything he, in fact, does not do. Composers are not the only ones subject to it, he satirises poor violinists by using strange scales (which incompetant violinists accidentally play) and terrible dischords in the horns.
As for how they did it, they probably had to put very little thought in. Mozart just wrote the music in his head. Less stratospheric composers use musical theory to copy what they, the true genii, simply knew straight off the bat.
